Vegan Frittata

I guess Kroger and I are becoming good friends because I was there AGAIN. While there I found a vegan frittata by Foodies on sale for 1.99. I read the box, checked the ingredients and decided to try it. I am a fan of their organic ingredients and that it is gluten, soy and nut free. It is always good to know what vegan (plant-based) options are available. So let me dive into my thoughts.

The directions gave the option to cook in the microwave or oven. I chose the oven, no need to add ‘waves’ to my meal. Upon removing the frittata seemed a little dry in appearance, which I chalked up to being in the oven. However, when I tasted it, it was a little dry and I was hoping for a more flavor. I enjoyed the bits of potatoes that were present in some bites throughout. I decided to add sriracha because I like heat and it made it less dry. 

 

Will I eat this again? Probably, maybe with some grits or on a sandwich because I like options. Sometimes you just need something quick and easy – throw it in the oven and keep it moving.

  1. Although I’ve never tried Foodies food (*chuckle* “Foodies food sounded funny to me 😆) anyway… I love your authentic opinion of this frittata! I too love options and adding some “sauce” definitely seemed like it gave the meal what you needed. Something I would possibly try when I come visit the States soon 😉
